Manuscript Topics
The food system plays an important role to the health of people, and the sustainability of the environment. With the growing global population, various problems including the lack of food security, rising health concerns, and global warming arises. This stems from several issues such as the increasing land use conflict between agriculture and urbanization, energy intensive food processing, and an increasing demand for animal based dietary protein and processed foods. In addition, there is also rising concerns over incorrect and/or insufficient nutrition, and a movement towards personalized nutrition. Hence there is an need to increase development of technologies to tackle these issues for a sustainable food system.
Potential topics include, but are not restricted to
• Sensors related to improving urban farming processes
• Technologies which increase resource use efficiency in urban farming
• Alternative and novel protein sources
• Sustainable food processing technologies
• Metabolic biomarkers
• Technology innovations for food waste valorization
• Whole food and gut microbiome functionality
